Counting Sheep by Lindsay Jones


Ingredients:

1.25oz Canadian rye

0.50oz fino sherry

1 bsp peated scotch Ardbeg 10

1oz lemon juice

0.75oz apple and tarragon cordial

1 egg white

Cracked pepper


Method:

Add all ingredients but the cracked pepper in a shaker and dry shake. Add ice and shake vigourously. Fine strain in a chilled coupette.


Garnish:

Cracked pepper on top.
